  • Abbie Cafe assistant Abbie joined us in January and will be working all around the café, from washing up to making coffees. She’s only with us for a few months: in July she’ll be heading to Africa for the more exciting part of her gap year! In the autumn she will return, full of tales of washing elephants and teaching English in a tribal school, and begin studying medicine in Plymouth.

    She has an unhealthy love of Feta cheese; her ideal present would be a 10kg block! If any of our customers take a holiday in Greece this spring they may find a request for something to be brought back with them…

    Outside work Abbie plays the flute although hasn’t played in an orchestra since leaving school last summer.
  • Emily Cafe assistant Emily is one of our newest staff but has quickly made herself at home in our team and loves chatting to the customers. You may well meet her serving you at the till or meeting you when you walk into the café. And if you do, there is no mistaking her by the strong American accent! Emily is from New Jersey and moved over to the UK in 2016 after meeting and marrying Aaron (at the time they met, he was in the navy, but she maintains that his uniform didn’t make a difference…).

    She loves living in Brixham and taking coastal walks, but says that some things just aren’t the same in the UK, in particular Macaroni Cheese just doesn’t have the same synthetic taste.

    Outside of work Emily loves to bake and to get to know her new home!
  • Alex T Cafe assistant Alex is a student at Churston 6th form and works with us at the weekend and school holidays.

    He is a keen linguist with a mixed English / Serbian / Macedonian ethnicity and a passion for Spanish! No doubt once he finishes his A-levels he will be off travelling around Europe and putting these skills to good use. In the meantime we are looking forward to fluently welcoming any Serbian tourists this summer.

    Alex plays basketball for the Torbay Tigers under-18 team who are so good they play in the national league and regularly have to travel all over the country.
  • Dani Chef Dani joined us in 2015 and the café has not been the same since (and not just because of the photos of Nigella he sticks everywhere). A talented chef, Dani has previously worked in a number of busy restaurants including a Mexican in Bristol. Within our team he takes the lead (with lots of help from our other chefs) on producing our home-made specials. From delicious soups to seafood chowder, and with a lot of delicious vegetarian food options along the way, he loves the challenge and the creativity of making seasonal, local, delicious dishes all year.

    And for anyone who has not tried Dani’s Mexican evenings – well, you’re missing out!

    Sometimes Dani even remembers to order the ingredients for his specials before trying to cook them.

    Outside of work Dani lives with his partner Chris and (more importantly) his adored and adorable Labrador Lucy.
  • Alex F Manager

    Alex moved down to Brixham with Lucy in 2014; previously they were based in Milton Keynes (but he is really a northerner). He enjoys wearing shorts every day and being able to walk along the coast path, and strangely doesn’t miss the roundabouts and concrete cows.

    Alex graduated as a chemical engineer and worked for seven years as an improvement consultant helping mostly industrial companies to make their processes faster, more efficient or less wasteful. This took him to varied locations around the UK, Australia, Germany, Holland and Belgium with clients ranging from chemical plants to hospitals. With Lucy he decided to completely change his lifestyle by moving down to Devon and being based in the same place each week. The Guardhouse offered the perfect opportunity at the right time.

    In the café Alex is responsible for keeping out of everyone’s way as much as possible so that they can get on with their amazing work without him causing trouble. He has an unhealthy love of spreadsheets. Outside of work Alex plays bridge and enjoys conducting essential market research in local food & drink establishments.

  • Lucy Manager Lucy moved to Brixham in 2014 when she and Alex wanted a change of life and to spend more time together. After studying German and Italian at university she worked for several years in Italy and the Alps in jobs involving walking, skiing and cooking. The most recent role involved taking groups on incredible walking tours around various parts of Italy. Her favourite spots are Sicily, where she studied for a while and where the rugged scenery is unspoiled by tourism, and the Dolomites where she first met Alex in 2010.

    Lucy was born and grew up in Northern Scotland on the side of a sea loch. The local community was so sparsely populated that there were only 12 children in her entire primary school!

    Her passion for food developed through her childhood and eating plenty of fresh fish, scallops and oysters surely played a part. When travelling abroad she learned a lot about the regional food in Italy and always loves to experiment with new flavours and ingredients. She is one of the people who always chooses the item off the menu which she has never heard of, just in case it is the best thing ever.

    At the Guardhouse Lucy is the driving force behind our food, from the local and seasonal specials board to the themed evenings. In this capacity she is very well backed up by our team of chefs! You are equally likely to see her working behind the coffee machine, in the kitchen, chatting to customers or helping out with the washing up.
  • Ben Barista, Chef Ben joined us in February and will be with us until the autumn. He is a construction student and decided to put his education into practise by renovating a house in Brixham! He spends his hard-earned wages on exciting things like kitchen tiles and plumbing accessories. He hopes to complete and sell his house before the end of the year, and then move away for the next phase of his training which involves working on a construction project. Inevitably we have put his practical skills to use on several DIY jobs in the café!

    Before joining us, Ben worked in a highly-regarded gastro-pub in the Cotswalds. Despite his cheeky young face he has a wide range of experience from this and other roles, both in the kitchen and with making coffees.

    Ben has pioneered Indian cuisine at the Guardhouse and his first themed evening in April was a resounding success with the tastiest onion bhajis we had ever eaten! We look forward to a repeat run of this menu several times over the summer – check our website for details about the latest evenings.

    Ben is the only member of our team who is (at least partly) qualified to fly a plane. He offers a valet parking service using Berry Head as a runway for anyone arriving by private jet.
  • Sandra Barista Sandra joined us in 2015 and is one of our main baristas. She loves to keep expanding the variety of drinks and latte art patterns she can make. Current experiments include flavours of iced tea for the summer, perfect hearts on every latte, and a surprising grey hair style. Perhaps she saw the manager’s hair colour and thought it looked amazing.

    Sandra is Swedish and therefore has a beautiful pronunciation of various English words. We’ve not managed to learn much Swedish from her but do enjoy listening.

    Sandra lives in Paignton with her boyfriend, who enticed her over to the UK in 2015 with the promise that she would enjoy the balmy English Riviera weather. Since arriving she often wonders when this will arrive; however in the meantime she has developed a passion for English ales. She is happy not to live in Brixham because apparently ‘it smells of fish’?!
  • Vicky Barista, Chef Vicky joined us in March 2016. She was born in Dnepropetrovsk, a town in Eastern Ukraine, and has travelled to Brixham via Russia, France and London. She is an experienced chef and most recently worked in one of Brixham's best known fish restaurants. At the Guardhouse she has a variety of roles including chef, barista and champion cake slicer.

    Her Brixham Fish evenings in April were very popular, featuring not only freshly cooked Brixham Fish, but also her signature cod & prawn cakes with mango salsa (the dish she cooked on her trial which won her the job!).

    Since joining the team, her competitive nature has shown through in her desire to perfect her latte art. At this rate she will be making swans, peacocks and maps of Ukraine within a few months.

    Vicky currently holds the award for 'team member with most interesting tattoos'. We suspect that over the coming years she will also win the award for 'number of hair colour changes'. Instagram
  • Sarah Chef Sarah  has been in charge of the kitchen at the Guardhouse since May 2013 – if you've visited us since then, you've almost certainly eaten some of the lovely food she has prepared! No matter how busy the kitchen gets, she is a calm and efficient chef who brings consistent high quality to every dish she cooks.  She is also our egg-poaching champion, with our regular customers basing their menu decisions on whether she is working or not!

    Sarah is a big fan of America and once helped set up an American diner in Brixham. In 2015 she visited Florida, which inspired her to hold an American’ themed evening dinner.
  • Diane Manager Diane started working at the Guardhouse in spring 2014. Perhaps the friendliest and kindest person in the world, it is hard to imagine why she is known as ‘Dragon Lady’.

    Despite taking the job on the condition that she didn’t have to cook, Diane is adept in the kitchen and is responsible for our homemade American pancakes, Paella evenings and many a bacon sandwich. Her passion for quality and consistency requires occasional sampling of cake and (especially) checking that the wine is not corked.

    Sometimes she gets to enjoy her tea while it is still hot.

    For many years Diane worked on long-haul British Airways flights and it is rare to find a country she has not visited. She has since  tried a wide range of careers, including running a sandwich van and a hotel, teaching, and was responsible for importing Ugg Boots to the UK for the first time! She lives in Brixham with her two daughters.
  • Brenda Barista Brenda joined our team in 2014 and has quickly become our resident coffee expert! She is constantly seeking to improve the quality and consistency of all of our hot drinks – her favourite being the beautiful “Flat White”. In pursuit of perfection, she is often shaking by lunchtime due to a caffeine overload from her practise drinks.

    Brenda  introduced the famous Guardhouse Special Hot Chocolate to the café, and keeps introducing further ideas for our coffee and hot chocolate selection.

    Brenda has spent most of her life in Brixham and with her partner Chris has three children.
